Garlic heads and cloves come in many sized as any of you have seen if you have bought garlic from us. When we started this garlic growing project we started with heads of garlic no bigger than what you would find in Wal-Mart. Planted the individual cloves. And repeated the process for several years now and our heads weigh an average of 4 oz most of the time.
Many recipes call for so many cloves of garlic. Well there is a big differance between the cloves from the store and what we grow here. So... ... ... How much is a clove? There really is no good answer because of all of the different varities and head sizes. So how about a general rule of thumb? Ok, let's use our conventional store bought garlic, what we call white paper garlic.
On average a clove weighs between 4 to 7 grams, an average of 5.5 grams. (or .19 oz.)
Our 4 ounce heads equal 113.4 grams.
113.4 divided by 5.5 equals 20.6 cloves per 4 oz. head. Anyone who has bought our garlic knows that there is not 20 cloves in there. It is more like 10 or 12 at most. For garlic lovers like my family that is good. For others, not so good.
So let's do some break downs...
1 Clove = average 5.5 grams or .019 oz.
1 Clove = 1 teaspoon chopped fresh
1 Clove = 1/2 teaspoon minced fresh
1 Clove = 1/4 teaspoon dehydrated and powdered
So, now we know not all garlic is created equal and how much to add to that new recipe that we want to try...

That does not mean that is the only site I read. I read others including one from Food Network. This one just seemed to have the most information.
